Have you ever tried making a cream puff and ended up making cookies instead?
No?
Well, the first time I tried making a cream puff, it did not go as planned. In the beginning, everything was going great …or so I thought….
Long story short, when I took the tray out of the oven I saw nothing but very buttery super gentle cookies.
I was very disappointed! They weren’t even regular cookies. They would explode into crumbs as soon as I touched them, so I decided to make some sort of a no bake yogurt cake where I can use these cookies as a crust.
I already had the base planned out, as for the filling, I decided to use up whatever yogurt I had in the fridge. I also decided to use some leftover coconut yogurt for the additional flavor.

If you ever end up making cookies by accident or just have any sort of cookies laying around and you wish to use them up. This easy no bake yogurt cake is an easy and simple recipe. It requires minimum effort and is ready in just a couple of hours.
So the procedure is pretty simple.
Step by Step Guide – No Bake Yogurt Cake Recipe
Step 1: Place all the cookies into your food processor, and pulse the cookies. Mine were already too soft and gentle, if you are using a more sturdy cookie, I would suggest to pulse them in a blender in order to break them up into a crumble.

Also, my cookies were already very buttery, so I did not add any extra butter. If the cookies you are using for this creamy no bake yogurt cake are dry, I would suggest mixing in some butter to shape them better into a crust base.
Step 2: Go ahead and take out your big mixing bowl where you are going to do a lot of mixing. So I added a bit of raw brown sugar, dairy 3% yogurt, some coconut yogurt, vanilla extract, a bit of almond milk for flavor. And lastly, I added a few spoons of condensed milk.
Step 3: Separately in a cup, dissolve some gelatin in hot water. Let it cool a little, and then add it to the rest of the yogurt batter.
Step 4: Mix it all together until you have one uniformed smooth texture.
Step 5: Once mixed well, pour the creamy yogurt mix into your baking shape.

Step 6: You can top it up with some chocolate, crushed nuts or sprinkles… Or fruits!

I couldn’t find my sprinkles so I went with some chocolate.
Step 7: Cover it up and place it in the fridge. Let it sit for 2-3 hours or until you can see that it is firm.
Make some coffee. Cut a slice. And enjoy your no bake yogurt cake!
