This spaghetti with avocado sauce recipe came to life when I sat down and thought how I could best balance flavor and a super-quick cook time. Avocado is one of my all-time favorite ingredients, and this recipe really helps bring it to the forefront in a delicious, creamy sauce. While spaghetti is just my effortless to go for carb choice…this spaghetti with avocado sauce is surprisingly a light meal.
If you find yourself giving up on delicious, fresh meals because of your busy schedule, then this spaghetti with avocado sauce dish is like a big, warm hug. You aren’t bound to any sort of pasta, and you can swap out spinach for basil. The goal in this recipe is to show how you can make great, fresh food in minimal time, so feel free to experiment.
I believe that the key to cooking delicious meals in short amount of time is laying out the process in your head first. For this spaghetti with avocado sauce recipe, we will be making the avocado sauce while the pasta is boiling.
For this super easy and quick spaghetti with avocado sauce you will need the following ingredients…
Ingredients
- 2 ½ avocados
- 85 grams dry pasta
- ½ Red onion
- 2 cloves of garlic
- Spinach or basil (based on your preference)
- Salt&Pepper
- ½ lime
- Minced cashews as a topping (optional)
- 1 ½ tbsp of olive oil
First we begin with making pasta…
Step 1: To start, fill a pot with water and set it to boil on a high heat. As it heats up, season your pan of boiling water with salt. It should taste salty like the sea when you try a spoonful. Taste for saltiness BEFORE it reaches a boiling point. Be careful not to burn your tongue.
Step 2: Once the water is boiling, reduce the heat to medium and drop all of the pasta into the pot.
There’s no limitation on pasta here, you can use whatever pasta you like or have in your pantry—penne, spirali, bucatini, vermicelli, anything goes! Some types of pasta take longer to cook than others, so make sure to check if yours could extend your overall cooking time.
As the pasta cooks, we’ll make the creamy avocado sauce to save on time.
Let’s begin making the avocado sauce…
Step 3: Roughly chop onion and garlic, it does not need to be perfect as it will be all blended afterwards.
Step 4: Add your onion and garlic to a pan and sweat them on a medium to high heat. The goal is to soften the onions and develop the flavour of the garlic. If you’re really low on time, you can skip this step and add the garlic and onion to the food processor raw.
Step 5: Add the onions, garlic, avocados, lime, seasoning, and olive oil into a blender or food processor. As for leafy greens you can choose between basil or spinach based on your preference. Both of these options are great for enhancing and giving that bright green color to the sauce. Blend everything together until everything becomes it forms a smooth and creamy texture. Make sure to stop blending and scrape off any bits on the sides.
If you find that your sauce isn’t saucy enough, you can add extra olive oil as well as some water to get the right consistency. I would suggest to add no more than 2 tablespoons of water, otherwise the sauce will not envelop spaghetti well.
Now it’s time to serve our spaghetti with avocado sauce dish…
Step 6: Firstly, drain the pasta off in a strainer. Mix the pasta with the avocado sauce, covering it liberally and making sure to get the sauce in the pasta’s crevices. Add sprigs of basil to garnish and for extra flavour. You can also mince some cashews and sprinkle them over the dish, but feel free to leave these out if you’re allergic or don’t like nuts. You can add some olives like I did 🙂
Serve immediately and hot.
